I went to a Fighters baseball game this past weekend and finally got to visit the โ€œRamen Terraceโ€ at the new ES Con Field in the Sapporo metro area. The first picture was the recommended special miso ramen from Ramen Baisensha. It was a great bowl! There were six total restaurants/food trucks to choose from. Come check it out if you ever get a chance to see the Fighters play at home. It is an amazing baseball stadium!

Don't ever use discount pork bones for tonkotsu

I thought, "Yay! A dollar off per pound!" for bones that only cost $2.50 per pound anyway. Not much in the way of savings...

I get home, and the bones are funkier and stinkier than usual. I think, "That's just what the preboil step is for, right? It'll be fine."

It was not fine. The final stock was just bad. With the tare and some onion and garlic oil, it was almost edible, but I could still taste a bit of that not-good pork leg smell in my mouth an hour later. I'm gonna have to toss the entire batch and do it over again.

I've made dozens of batches of tonkotsu stock over time, to the point where I don't buy any, and I don't particularly need to go out and get ramen. I even use the tonkotsu stock to make things like stew and risotto! But this was just awful. Lesson learned, don't skimp on parts that are cheap anyway, and discount, when applied to pork bones, means BAD.
