I can have ramen again!!

I can't have wheat, or rice due to celiac disease and an allergy, so for my pasta I've used corn replacements.

The local alternatives all didn't hit the spot for me, like buckwheat or similar grain replacements.

After 8 years I've finally found a corn ramen noodle! It taste identical to regular wheat noodles. So my wife an I can eat ramen again :)

If anybody has any similar dietary restrictions I highly highly recommend this.

Ate morning ramen at O-Tsubaki Shokudo in Koganei! Got the negi ramen and negi rice.
Itโ€™s the real deal when it comes to the "Ramen Shop" lineage, but the soup's flavor and balance are on another levelโ€”totally deserves its rep as one of Tokyo's best. The crisp green onions paired with that killer broth hit the spot so well in the morning, and the negi-rice combo was so good I couldn't put my chopsticks down!

Weird questionโ€ฆ how many restaurants in Japan use kelp/fish dashi as a base?

Obviously it probably matters a lot which region youโ€™re in, but do most of them use dashi in their broth? I feel like most ramen restaurants where Iโ€™m from (EU country) donโ€™t, but I do have a Japanese owned ramen restaurant in my city that uses dashi as a base.
