In an ideal world, there’s a jar of something pickled in my fridge at all times—hether it be red onions, pickled kale stems, or some napa cabbage I forgot to cook. I don’t plan for this, but when I have veggie scraps, trimmings, or simply a wilting head of something or other, I follow the easiest pickling ratio in the world: the 3-2-1 brine. That’s 3 parts water, 2 parts vinegar, and 1 part sugar. That's it.

This isn’t a secret—plenty of chefs are out here using this ratio—but it’s the one that stuck with me. It’s like culinary muscle memory.Sometimes, having to look up a brine recipe is the difference between veggies going in the pickle jar or going in the trash. This is a decidedly sweet-and-sour pickle, a real-crowd pleasing flavor profile that’s perfect for veggies like onions or radishes, which have a bit of bite and crunch to them.

The Case for Copper Cookware

Copper cookware glows. It radiates like Arthur’s grail. Camelot’s galley must’ve been filled with the stuff. Buckingham Palace still is. Same with the kitchens of Monet, Montgeoffroy, and Martha. There’s a reason for this: Copper isn’t just nice—it’s obviously nice. The metal’s pure and the vibe’s the most electric. Point being, copper rocks and—when molded into casseroles by famed Dansk designer Jens Quistgaard—it performs.

For Quistgaard, copper’s beauty boosts its performance. According to Stig Guldberg, author of the biography, Jens Quistgaard: The Sculpting Designer, the Dansk designer sought to create casseroles that would “not be reserved for the stove,” meaning they could double “as an attractive centerpiece” on any dining table and thus eliminate the need of owning—and subsequently washing—serving bowls. As intended, Quistgaard’s copper, which debuted in 1960 and descends from his Ankerline and Købenstyle collections, is rich with stove-to-table benefits.

I Made Iced Lattes With the Founder of The Nitro Bar

The word viral is overused (I’m guilty), but when it comes to the internet-iconic Rhode Island coffee shop The Nitro Bar, there’s no better way to describe the phenomenon. The Nitro Bar has three locations across the tiny state of Rhode Island, and all of them have an ever-growing line out the door at all times. Their TikTok and Instagram rack up crazy impression numbers, which has food businesses everywhere copying their marketing tactics. The genius behind it all: Audrey Finocchiaro, the co-owner and co-founder of the successful shop(s), which started as a humble little cart serving cold brew.

The videos and social media content that perform so well pretty much all showcase a Nitro Bar drink being made, with a specialty coffee syrup or some sort of flavored twist. Right now, their summer syrups include strawberry and caramelized banana (yum), while some off-season favorites include orange chocolate, black raspberry, and cherry vanilla. Customers wait in long lines year-round for anything and everything Nitro Bar— including me. When I lived in Boston a few years ago, I would hop on the commuter rail train to Providence and get their chocolate wafer iced latte and spend a rainy day sipping and snacking with friends. I’ve been a follower of Audrey and the Nitro Bar’s work for a while now, and was so happy to get her into the Food52 office.

I loved Passover growing up. My mom would host 60+ people in our house, my grandmother would fill disposable hotel pans with brisket, sweet and sour meatballs and potato kugel. With all the amazing food I was always confused by how we settled for the crumbly, dry matzo that sat in boxes on every table.

Sure, the bland, not-so-pleasent tasting nature of matzo is kind of the point: its meant to remind us of the Jews escape out of suffering an Egypt that was so quick the bread couldn’t even rise. However, our dessert spread was always stuffed with delicious cakes and confections made with matzo meal. I was determined to get the same satisfaction out of the matzo itself by making it from scratch.
